I think the next question is for those that played HS ball, were they any good? A few that said they had, also said they weren't anything special.

I don't think that matters. An average high school player is going to kick the shit out of the best 11-year-old. Typically, there's such a huge difference in strength and body size, that it just wouldn't be fair.
If any one of the high school players pitched and could throw off-speed stuff, the LL batters wouldn't have a prayer.

LLWS is mostly 12 and 13 year olds. Though I agree there is a definite difference. Though some of these kids are pretty big. Biggest kid is 6'2" 226.

I'm 100% fine with this. I'm just glad there's an actual plan in place that isn't, "Let's load up on retreads and hope we get lucky." I'm a little tired of that plan.
